IN ORGANIC CONVERSION

In 2022, we have committed the entire estate to organic conversion for certification in 2024.

 

MAKING BIODIVERSITY AN ASSET

Thanks to the biodiversity, we do not use any insecticides or chemical treatments. We only use organic fertilisers (compost).

 

RESPECTING THE RHYTHMS OF NATURE

The olives are harvested during the day in order to protect native and migratory birds that live in our olive groves.

 

A RESPONSIBLE COMPOSTING SYSTEM

Implementation of a system for composting the pomace, the solid residue from the crushing of olives after the oil has been extracted. These residues are used to improve the soil of the plots, thus completing the entire cycle of oil production and minimising the amount of waste.

COMMITTING TO EXCELLENCE

Once yielded, olives are brought within 30 minutes in stainless steel tanks to our mill. Less than one hour separates the harvesting process from cold extraction.

GIVING PREFERENCE TO FRUIT

In order to avoid oxydation and deterioration of the olives, the crushing is done immediately. This reduces the time lapse between harvesting and the final production of the oils to 24 hours. This is a key element in guaranteeing their aromatic quality.

 

HIGH TECH AT THE SERVICE OF AUTHENTICITY

The two main stages in the production of the oil are cold extraction by centrifugation and storage of the oil without filtration in the tanks of our cellar. This operation allows us to obtain a high quality extra virgin olive oil.

 

OUR GREEN GOLD

To avoid the weakening of aromas and nutrients, the oil is kept in stainless steel tanks in our cellar under an inert atmosphere kept with nitrogen. 

 

A PREMIUM OIL

Oil bottling is done exclusively by clients' order, so that our customers can enjoy a fruity extra-virgin oil full of aroma and flavour of freshly pressed oil.
