This gastronomic wonder is the ultimate in our range. The olives are harvested early and pitted before going through the 10 classic stages of olive oil production. Its aromatic score is characterised by a green fruitiness, a flavour and an aroma that are more marked than those of traditionally produced oils. The oil is long in the mouth and surprisingly bitter and spicy for the Arbequina variety. On average, it takes 12 kg of Arbequina to obtain 1 litre of ELIXIR DENOYAUTÉE.

ELIXIR DÉNOYAUTÉE goes well with bitter salads, grilled vegetables, poultry and white fish. Perfect for cheese tasting, it tempers the intensity of blue cheeses and enhances fresh and soft cheeses.

Born in Cadiz in the first century A.D., the Roman agronomist Lucius Moderatus Columella, a great connoisseur of the olive tree and olive oil, noted in his reference work on agriculture in the Roman era: "For the production of oil, suspended millstones allow for the best execution because, depending on the size of the olives, they can be lowered or raised so that the stone does not break, which would spoil the flavour of the oil". Cuadrat wanted to revive this age-old tradition of a stoned olive oil with a more intense fruitiness and a more powerful green colour. Recent studies have shown that pitting improves the organoleptic and nutritional quality of olive oil. Thus, it is more resistant to the phenomenon of auto-oxidation observed in oils obtained from hammer mills.
